Egg Cake from Scania
1/2 C flour
1/2 tsp. salt
1 tsp. sugar
1-3/4 C milk
5 eggs
1-1/2 TBS butter (for frying)
In a bowl, mix the flour, salt and sugar. Stir in a bit of the milk until mixture is smooth. Add the remaining milk and the eggs; blend well. Melt the butter in a skillet; pour in batter. Fry on low temperature. Stick the dough carefully with a fork so cake solidifies evenly. After about fifteen or twenty minutes (or when the mixture appears to be solid), turn the cake over and fry the other side for about three or four minutes.
Suggestions: Serve the cake with cut chives, bacon or jam.
