Algerian almond soup
2 TBS butter
1/4 C onions, chopped
2 TBS flour
4 C boiling chicken stock
1/2 C ground almonds
1/2 C heavy cream
Salt & white pepper to taste
Melt butter in a saucepan; add chopped onions and cook for about four minutes or until onions are soft but not browned. Sprinkle flour over top; stir to form a smooth roux. When blended, gradually whisk in boiling chicken stock. Bring mixture to a simmer and cook for two to three minutes; stir in ground almonds. Return to a simmer and cook for about twenty minutes, stirring occasionally. Remove saucepan from heat and stir in heavy cream. Allow the soup to heat through but do not boil; season with salt and white pepper to taste. Ladle soup into warmed bowls and serve.
