Iranian cucumber & tomato salad
3 large tomatoes, finely chopped
2 cucumbers, finely chopped
1 small onion (red or yellow to preference), finely chopped
2 TBS lemon or lime juice to preference
2 TBS olive oil
1 TBS fresh mint, finely chopped
1 tsp. garlic, minced
Salt & black pepper to taste
In a large bowl, toss all ingredients together; mix well. Serve chilled. Recipe makes about four servings.
