2 TBS Irish butter (Kerrygold)
1 onion, chopped
2 carrots, sliced
4 TBS cream flour*
2 C browning stock (beef broth)
Fresh parsley & thyme, chopped
1 LB cooked minced beef (ground beef)
2-3/4 C mashed potatoes
Melt butter in a skillet over medium-low heat; add chopped onion. Cover and allow to cook for about two minutes. Add sliced carrots. Stir in flour and cook until slightly browned; add stock and herbs. Bring mixture to a boil; cook for about five minutes to reduce liquid. Add cooked beef and bring back to a boil. Spoon mixture into baking dish; cover with mashed potatoes. Bake at 350-degrees F for about thirty minutes. Cut into squares and serve.
*Note: Basic household flour is known as "cream flour" in Ireland. All-purpose flour can be used as a substitute.
