Shawarma

Shawarma (Jordanian stuffed pita sandwich)Jordanian stuffed pita sandwiches

Mix all ingredients together in a non-reactive bowl. Set aside to marinate for one hour or overnight. Drain and discard excess marinade.

 

Heat oven broiler to high. Spread the meat mixture in a single layer on a baking sheet. Set four to six inches under broiler flame; broil until cooked through, about five to eight minutes. Stir halfway through to cook evenly. Spoon portions of Shawarma onto pita or Taboon bread; fold over and serve. Repeat the process with remaining meat mixture and bread.

 

Suggestions: Shawarma is typically served with Tahini sauce (which is made from hulled sesame seeds), yogurt sauce or garlic mayonnaise. Other garnishes can include chopped tomatoes, sliced cucumbers, shredded lettuce, sliced red onion, pickles, mango pickle or hummus.
