Roast Beef Tacos
1 LB leftover cooked roast beef, cut into strips
2 green bell peppers, pith removed, rinsed & chopped
1 onion, chopped
1 TBS corn oil
2 tomatoes, chopped
Salsa or hot sauce to preference
8 tortillas
Cut leftover cooked roast beef into 1/8" strips. In a large skillet, sauté chopped green bell peppers and onion in corn oil until tender, stirring occasionally. Add roast beef strips and chopped tomatoes; continue to cook for about twenty minutes, stirring occasionally. Warm tortillas in the oven or microwave; place roast beef and vegetable mixture down the center of each tortilla. Top with salsa or hot sauce to preference; roll tortilla and tuck edges. Serve.
