Refried Mashed Potatoes
Leftover cooked mashed potatoes
2 TBS butter
Salt & black pepper to taste
Melt butter in a skillet over medium heat. Place large spoonfuls of leftover mashed potatoes in skillet; flatten slightly with a spatula. Cook, turning once, until both sides are lightly crispy and golden in color. Season with salt and black pepper to taste.
Suggestions: Serve as a side dish or in place of hash browns for breakfast.
