4 lady fingers or 1 C leftover cake, cubed
2 TBS raspberry jam
2 TBS sherry
1 tub (5 oz.) vanilla pudding
3 TBS orange juice
Whipped cream topping (Cool Whip)
Split lady fingers. Spread raspberry jam on split sides; cut into bite size pieces. Arrange pieces in two dessert dishes. (If using cubed leftover cake, spread cubes with raspberry jam and arrange in two dessert dishes). Drizzle sherry over each. In a bowl, blend together vanilla pudding and orange juice. Spoon over lady finger pieces or cubed leftover cake. Refrigerate for about four hours. Top with whipped cream and a dollop of raspberry jam just before serving. Recipe makes enough for two servings.
