Iranian deep-fried almond cakes
2 eggs, divided
1/2 C plain yogurt
1/2 C vegetable oil
3/4 C flour
1 tsp. baking powder
1 C ground almonds
1/2 C granulated sugar
1 tsp. cardamom powder
Powdered sugar
Separate eggs; discard egg whites or freeze for other uses. In a bowl, mix egg yolks with baking powder, yogurt and vegetable oil. Add flour gradually, stirring well after each addition. Pour dough into a plastic bag; set aside for one to two hours. In another bowl, combine ground almonds with powdered sugar and cardamom powder; set aside. Form dough into orange-sized balls. Lightly flour a flat surface; flatten dough balls to a thickness of about 1/4-inch using a roller. Using a cup, cut circles into dough; place a few teaspoons of almond-sugar mixture in the center of each circle. Bring edges of the circle together; press to seal. Heat vegetable oil in a large skillet; add dough pockets and fry until golden, turning to cook all sides. Drain on paper towels; roll in powdered sugar and serve.
