Pumpkin Hot Cocoa Mix
1-1/4 C nonfat dry milk powder
1 tsp. cornstarch
3/4 tsp. pumpkin pie spice
1/4 tsp. salt
Mini-marshmallows or whipped cream (for garnish; optional)
Sift all the ingredients together in a large bowl. Transfer mixture to an airtight container and store in a cool place. Makes about three cups of dry cocoa mix that will keep for up to six months. To make pumpkin hot chocolate: Place 3 tablespoons of dry cocoa mix into a large coffee mug and pour in hot milk or water; stir until thoroughly combined.
Suggestions: Top hot cocoa with mini-marshmallows or whipped cream if desired.
