Tunisian chicken roast
1 TBS olive oil
1-1/2 LBS, peeled & cut into 2-inch slices
1 large onion, finely chopped
2 tomatoes, finely chopped
1 green bell pepper, finely chopped
1 tsp. salt
1/2 tsp. black pepper
3 LBS chicken, cut into 6 pieces
1 C water
4 sprigs fresh parsley, finely chopped
Rub a baking dish with olive oil. Layer potatoes, onion, tomatoes, green bell pepper, salt and black pepper. Bake at 375-degrees F for about ten minutes. Remove dish from oven; place chicken on top. Return to oven and continue cooking for about thirty minutes. Add water and sprinkle with parsley. Bake for another fifteen minutes. Serve.
