Pot Roast Pies
1 C leftover pot roast, cut into bite-sized pieces
1 C cheddar cheese, shredded
1 pkg. prepared pie dough
Egg Wash (equal parts of egg & water whisked together)
Preheat oven according to directions on package of prepared pie dough. Using a cookie cutter, create circle for mini-pies. Set aside. In a bowl, mix together leftover pot toast and shredded cheddar cheese. Place a spoonful of the mixture into the center of the dough circles. Place another circle on top, pinching edges with fingers or a fork to close. Brush pies with egg wash; bake according to instructions on package of prepared pie dough (five to ten minutes, or until crusts are golden brown). Serve warm.
