1-1/2 C leftover cooked pork, cubed (re: chops, pork steaks or roast)
1 can (4 oz.) sliced mushroom, drained
2 cans (14.5 oz.) stewed tomatoes with juice
Salt & black pepper to taste
Leftover white rice (for serving; optional)
In a large skillet, lightly brown cubed pork. Add sliced mushrooms; simmer for about ten minutes. Stir in stewed tomatoes with juice. Simmer for another twenty minutes, stirring occasionally. Season with salt and black pepper to taste. Serve over leftover cooked white rice (optional).
