2 LBS small plums, halved & seeded
2 C ruby port
6 whole cloves
1 cinnamon stick
1 tsp. orange peel, grated
1 C sugar
In a saucepan over high heat, bring plums, port, cloves, cinnamon and orange peel to a boil. Reduce heat to low; cover and simmer for three to five minutes or until plums are tender. Stir in sugar gently until dissolved. Spoon plum mixture into a large bowl; cover and refrigerate overnight. Suggestions: Serve the plums well-chilled in their syrup, or with vanilla ice cream on top.
