Cakes, Pastries & Pies > Greece > Phyllo Dough >
5 C flour
5 TBS vegetable oil
2-1/2 C water
Dash of salt
2 tsp. vinegar
Put aside part of the flour for flouring a pastry board. In a bowl, combine the rest of the flour with the vegetable oil and salt. Mix. Then add vinegar and water slowly, stirring. Knead and form the dough into a ball. Allow the dough to stand for about one hour in a cool place. Place dough on a floured board; roll out into a flat sheet as thin as paper.
Note: Phyllo Dough can be used for any kind of pie or for traditional Greek recipes such as Baklava, Spanakopita and Tiropita. It can also be used for the Tunisian pastry dessert Samsa.
