Pea Pods & Peppers
1 LB fresh Chinese pea pods (or snow peas)
4 C water
2 red bell peppers, cut into 1/4" strips
1 medium onion, cut into 1/4" slices & separated into rings
2 TBS vegetable oil
2 TBS margarine or butter
1/2 tsp. celery salt
1/8 tsp. black pepper
Wash the pea pods (or snow peas); remove the tips and strings. Heat water in a pot; add one teaspoon of salt and bring to a boil. Stir in the pea pods and boil uncovered for about two to three minutes; drain. Cook and stir the red bell peppers and onion in oil and butter in a large skillet over medium-high heat until the peppers are crisp but tender, about three minutes. Stir in pea pods, celery salt and black pepper. Cook until pea pods are hot, about one minute. Serve.
