Chadian peanut butter porridge
4 C water
1 C rice
3 TBS peanut butter
3 TBS wheat, millet or corn flour
Juice of 1 lemon
Sugar to taste
1 C milk
Bring three cups water to a boil in a cooking pot. Add rice. In a bowl, combine one cup of water with peanut butter to form a smooth paste. Pour into cooking rice; stir. In another bowl, mix together wheat, millet or corn flour with water to form a smooth paste; add to cooking rice mixture. Simmer for about forty minutes. Add lemon juice and sugar. Mixture should have the consistency of thick porridge. Add milk; stir. Remove from heat and allow to cool for about ten minutes before serving.
Note: La Bouillie is a typical breakfast meal in Chad.
