Pannkakor
Crepe Pancakes
2 eggs, beaten
1-1/4 C wheat flour (do not use self-rising flour)
2-1/2 C milk
1 tsp. salt
Butter (for frying)
Whipped cream (for serving; optional)
Jam (for serving; optional)
In a bowl, beat eggs with the flour and salt. Add the milk a little at the time; whisk to a smooth batter. The batter will be thin. Add one teaspoon butter to a hot skillet; pour about 1/4 cup of batter to cover the bottom of the skillet. Fry and turn until golden brown on both sides. Repeat process with remaining batter; add more butter for each pancake. Keep warm on a plate until ready to serve. Suggestion: Serve pancakes with whipped cream and jam.
