Ostkaka
Curd Cake
1-1/2 C each of cottage cheese & ricotta cheese
4 large eggs
1/4 C granulated sugar
1/4 C all-purpose flour
1/2 C almond meal
4 almonds, ground*
Butter
In a bowl, whip eggs together until fluffy. Stir in sugar, flour and cottage or ricotta cheese (if cottage or ricotta cheese appears too runny, squeeze out excess moisture before adding to mixture). Add the almonds. Pour into a buttered baking pan; bake at 425-degrees F for about one hour. Cover the mixture with aluminum foil if cake begins to brown. Allow to cool before slicing and serving.
*Note: Substitute ground almonds with one tablespoon of Amaretto liqueur if desired.
