Melt the butter in a cooking pot. Add the onions; cook until softened. Add the beef stock and bring to a boil. Reduce heat to simmer; add the potatoes and ale. Allow to simmer until the potatoes are tender and have broken apart. Remove pot from heat and add the grated cheese, and salt and black pepper. Mix well, and serve hot. Suggestion: Serve with warm French bread.
