Moroccan chicken & lemon
3 LBS chicken, cut into 8 large pieces
1 TBS cumin
2 tsp. paprika
1/2 tsp. dried ginger
1 tsp. turmeric
2 TBS salsa
4 cloves garlic, finely chopped
1/2 bunch fresh cilantro, finely chopped
Juice of 2 lemons
1/2 C all-purpose flour
1 C green olives, drained & pitted
1 lemon, cut into wedges
1 C chicken broth
Preheat oven to 325-degrees F. Coat chicken in spices, salsa, garlic and cilantro. Place in baking dish and pour lemon juice over the top. Sprinkle with flour and mix to coat pieces. Add olives, lemon wedges and broth. Bake uncovered for about one hour, or until chicken is thoroughly cooked. Serve.
