Mizeria
Cucumber & Sour Cream Salad
1 large cucumber, peeled & thinly sliced
1/2 C sour cream
2 TBS fresh dill, chopped
1 tsp. lemon juice
1/2 tsp. sugar
Salt & black pepper to taste
Peel and thinly slice cucumber. Place slices in a colander and sprinkle with salt. Allow to stand for about thirty minutes to drain liquid. Pat cucumber slices dry with a paper towel. In a large mixing bowl, combine sour cream, dill, lemon juice, sugar, salt and black pepper. Add cucumber slices; mix well. Cover and chill in the refrigerator for thirty minutes. Garnish with extra dill just before serving.
