Meaty Hash Brown Omelet
Butter
1 pkg. (2 LBS) frozen hash browns
1 small onion, peeled & chopped
1 green bell pepper (pith removed & rinsed), chopped
1 LB leftover cooked meat (bacon, ham, pork sausage beef steak), chopped
1 dozen eggs, beaten
1/4 C milk
2 C cheddar cheese, grated
Melt butter in a skillet; add hash browns, onion and chopped green bell pepper. Sauté until vegetables are translucent. Stir in leftover cooked and chopped meat. In a bowl, beat eggs with milk; pour over meat and potato mixture. Top with grated cheddar cheese. Cover skillet; cook over low heat until eggs are set. Recipe makes about eight servings.
