1 LB ground beef
1/2 C onion, chopped
Salt & black pepper to taste
1 can (16 oz.) green beans, drained
1 can (10-3/4 oz.) condensed tomato soup
1/4 C water
Leftover mashed potatoes
1 egg, beaten
1/2 C (2 oz.) American cheese, shredded
In a large skillet, brown ground beef with chopped onion, salt and black pepper. Add green beans, condensed tomato soup and water. Mix well; drain. Pour mixture into a square baking pan. In a bowl, combine leftover mashed potato with beaten egg until fluffy in texture; spoon over meat mixture in baking pan. Sprinkle top with shredded cheese. Bake, uncovered, at 350-degrees F for about twenty-five to thirty minutes or until heated through. Serve.
