Egyptian feta cheese omelet
4 eggs, beaten
1/2 tsp. black pepper (or to taste)
3 TBS feta cheese, crumbled
1 tsp. milk
1 TBS vegetable oil
In a bowl, beat together eggs and black pepper. In another bowl, combine crumbled feta cheese with milk. Heat vegetable oil in a non-stick skillet over medium-high heat. Pour in egg mixture, tilting pan until bottom is evenly covered. When edges of the egg mixture appear cooked, add feta cheese mixture to the center. Using a spatula, fold eggs over the top and bottom of cheese; fold sides over. Fry until egg is fully cooked. Serve warm.
Variations: Add chopped fresh tomato, sliced green onions or minced garlic.
