Maple Baked Apples
6 large apples, peeled & cored
4 TBS walnuts, finely chopped
4 TBS seedless raisins, chopped
4 TBS brown sugar, firmly packed
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
2 tsp. butter, melted
2 TBS light cream (sub with half-and-half)
6 TBS butter, melted
3/4 C maple syrup
Whipped cream
Cold maple syrup
Preheat oven to 400-degrees F. Butter six individual oven-proof baking or custard cups; place one apple in each cup. In a bowl, mix together the walnuts, raisins, brown sugar, cinnamon, nutmeg, two teaspoons melted butter and cream. Divide mixture evenly on top of apples in cups; press some of the mixture into the core. Pour one tablespoon melted butter and two tablespoons maple syrup over each filled apple. Bake for thirty-five to forty minutes, or until apples are tender but still hold their shape. Allow to cool before serving.
