Iraqi wheat pudding
3 C water
2 C granulated sugar
1 tsp. lemon juice
1/2 C unsalted butter
1 C wheat flour
Whipped cream (for garnish)
Cinnamon (for garnish)
In a large saucepan, combine water and sugar over low heat, stirring constantly until sugar dissolves. Increase heat gradually to bring mixture to a boil; add lemon juice. Reduce heat and simmer until syrup thickens, about ten minutes. Set aside. In another saucepan, melt butter and add wheat flour; stir until lightly browned. Add syrup mixture to butter and flour; simmer for about ten minutes, stirring constantly. Remove from heat and allow to cool for about twenty minutes. Place pudding into individual serving bowls; garnish with whipped cream and sprinkle with cinnamon. Recipe makes about six servings.
