Fatima's Little Fingers; Tunisia

In a bowl, combine hard-cooked and beaten eggs, chicken, parsley, Parmesan cheese, salt and black pepper. Cover bowl with plastic wrap and refrigerate for about thirty minutes. Divide mixture into egg roll wrappers or phyllo sheets; pinch-seal edges with water. In a large skillet, cook wrappers in 1-inch of olive oil until crisp on all sides. Turn as needed. Drain on paper towels. Garnish with lemon wedges. Serve.

 

Historical Note: The name "Fatima's Little Fingers" was derived from hamsa or khamsa, which is a palm-shaped amulet common in the Middle East. The amulet is said to represent the hand (or five fingers) of Muhammad's daughter Fatima Zahra, Islamic equivalent to the Virgin Mary.
