Lingonberry Preserves
3 C fresh or frozen lingonberries*
1 TBS grated orange zest
1 C water
2/3 C granulated sugar
If using fresh lingonberries, wash well and remove leaves and bad berries. If using frozen lingonberries, rinse under cold water to thaw. Place berries and orange zest into a saucepan with the water. Bring to a low boil; reduce heat to medium and cook until berries begin to burst, about fifteen minutes. Remove from heat; stir in sugar and refrigerate. Yield: 1 cup Lingonberry preserves.
*Note: Lingonberries can be substituted with cranberries or bilberries.
