Thai Lime Pork
1/2 LB pork loin or thick boneless pork chops
3 TBS fish sauce
3 TBS lime juice
1 TBS minced garlic
1 TBS chili pepper, finely chopped
1 TBS fresh coriander leaves & stems, finely chopped
1 tsp. sugar
3 stalks kale, leaves removed & stems cut (for garnish, optional)
1 lime, cut into thin slices (for garnish, optional)
Grill pork over medium-high heat until meat is no longer pink. Allow to cool slightly before cutting cooked pork into thin slices. Transfer pork to a serving platter. In a bowl, mix together fish sauce, lime juice, minced garlic, chopped chili pepper, finely chopped coriander leaves and stems, and sugar. Pour over pork on serving platter. Remove leaves from the kale; cut stems into 1-inch pieces. Garnish pork with kale stems and lime slices; serve.
