1 LB ground beef
1 medium onion, chopped
1 can cream of mushroom soup
2 baking potatoes, peeled & thinly sliced
1/2 C cheddar cheese, grated
1 C sour cream
2 tsp. salt
1/2 tsp. black pepper
In a skillet, brown ground beef with onion, salt and black pepper. Add mushroom soup to beef mixture and stir well. In a medium pot, cook sliced potatoes in water with one teaspoon of salt. After the water begins to boil, cook potatoes for about five minutes.
Grease a 2-quart casserole dish; add beef/soup mixture. Drain water from potatoes. Add potatoes to the casserole, mixing well. Sprinkle cheddar cheese over top of casserole. Bake at 350-degrees F for about thirty minutes. Before serving, add sour cream to top of casserole.
