Ladu
Comorian rice dessert
3/4 C raw rice, coarsely ground
3/4 C powdered sugar
1/3 C ghee*
1/4 tsp. cardamom powder
2 tsp. black pepper, coarsely ground
In a bowl, combine powdered sugar and black pepper; set aside. In a cooking pot, melt ghee over low heat. Add rice and cook, stirring constantly, until lightly browned and well-cooked. Add the cardamom powder; stir to mix thoroughly. Remove from heat and pour mixture onto a large plate; allow to cool completely. Combine sugar/pepper blend with rice mixture. Divide into seven equal portions and form into balls or brick shapes (laddus). Allow to dry before serving.
*Note: Ghee is clarified butter.
