1 sheet frozen puff pastry
1 kiwi, sliced into tiny bits
2 tsp. sugar
1 egg yolk, beaten
Flour for work surface
2 TBS unsalted butter
Roll out puff pastry onto a lightly floured work surface. Trim pastry to an 8-by-14-inch rectangle. Place trimmed pastry onto a baking sheet; put in freezer for about ten minutes. Meanwhile, prepare the filling. Slice kiwi into small size, and then place into a small bowl. Add sugar to bowl; mix sugar with the kiwi until thoroughly combined. Remove puff pastry from the freezer; brush the puff pastry with beaten egg yolk. Using a sharp knife, cut a 3/4-inch border around the pastry. Place the kiwi-sugar mixture on the border and then top with unsalted butter. Bake in a 350-degree F oven until pastry is golden brown, about thirty to forty minutes. Allow to cool before serving.
