Filling (Kiwi-Mangosteen Jam):

Filling (Kiwi-Mangosteen Jam): Slice the kiwi into a bowl; using a fork, mash kiwi until they attain a paste-like form. Press on the mangosteens until skins break; carefully break off the shell so the fruit doesn't fall out. Place the mangosteen into a blender; blend until smooth. Remove mangosteen seeds from the blender and discard. Pour the mashed kiwi into a cooking pot on a medium high heat; stir and cook kiwi for a few minutes. Pour blended mangosteen into the cooking pot and mix with kiwi. Mix both kiwi and mangosteen with two teaspoons sugar; stir until all three ingredients are combined thoroughly. Remove from heat; pour cooked jam into a sterilized jar. Place jar into refrigerator to chill and firm the jam.


Sandwiches: Brush parchment paper with oil; place paper on the bottom of a baking pan. In a large bowl using an electric mixer, whisk both sugar and eggs until pale and thick (about ten minutes). Sift flour into the mixture; fold until no traces of flour remain. Pour mixture into prepared baking pan; bake at 350-degrees F for about ten to twelve minutes or until an inserted toothpick comes out clean. Allow to cool on a rack for a few minutes.


Slice the cake into a mini-square sizes; spread kiwi-mangosteen jam on square and then cover with another half of mini-square cake. Serve.


Mangosteens*About Mangosteens: The purple mangosteen, also known as mangosteen, is a tropical evergreen tree believed to have originated in the Sunda Islands and the Moluccas of Indonesia. It grows mainly in Southeast Asia, and also in tropical countries such as Colombia, Sri Lanka, in the state of Kerala in India and in Puerto Rico and Hawaii, where the tree has been introduced. The fruit of the mangosteen is sweet and tangy, juicy, somewhat fibrous, with fluid-filled vesicles (like the flesh of citrus fruits), with an inedible, deep reddish-purple colored rind when ripe. Seeds are almond-shaped and sized. Only the white flesh of the purple mangosteen is edible (see photo at right). Due to restrictions on imports, mangosteen is not readily available in certain countries. Although available in Australia, they are still rare in the produce sections of grocery stores in North America and Europe. Mangosteens are available canned and frozen in Western countries. Without fumigation or irradiation (in order to kill the Asian fruit fly) fresh mangosteens were illegal to import into the United States until 2007. Data Source: Wikipedia.
