Kuwaiti cracked wheat soup
1 C uncooked dry cracked wheat
4-1/2 C water
Zest of 1 lemon or lime
4 small tomatoes, diced
1 onion, diced
1/4 C fresh cilantro, chopped
1 tsp. ground cumin
Salt & black pepper to taste
1 tsp. ground cinnamon
1 C cooked chicken breast, chopped
1 pkg. (1.79 oz.) Knorr chicken noodle soup
Lemon juice
Place cracked wheat in a cooking pot; add water and soak for ninety minutes to two hours. Simmer over low heat for about one hour; stir in lemon or lime zest. Place tomatoes, onion, cilantro and spices in a blender or food processor; mix thoroughly. Add mixture to cooking pot with cracked wheat; simmer for about thirty minutes. Add soup packet and cooked chicken; simmer for another thirty minutes. If mixture appears too thick, add more water to desired consistency. Add a squirt of lemon juice just before serving.
