Saudi Arabian cucumber & yogurt salad
1 C plain Greek yogurt (thick)
1 C cucumber, finely diced
1 garlic clove, minced & crushed
Sea salt to taste
1 TBS fresh mint, finely chopped
Place yogurt into a bowl; stir until creamy. Add cucumber, garlic, sea salt and mint. Stir well; refrigerate for about thirty minutes before serving.
Note: Mixture will not keep long as the cucumbers tend to lose their crispness quickly.
