5 to 6 potatoes, sliced into 1/4-inch thick rounds
Olive oil
Salt & black pepper
2 C cheddar cheese, shredded
8 strips leftover bacon, cooked & chopped
Sour cream
Chives
Preheat oven to 450-degrees F. Slice potatoes; place in a bowl. Add in olive oil and toss; add salt and black pepper. Place potatoes on a foil-lined baking tray. Cook for about twenty minutes. Layer cooked potato slices in a shallow dish. Sprinkle shredded cheddar cheese and bacon on top; bake for about five minutes. Top with sour cream and chopped chives to garnish; serve.
