Hodgepodge Casserole
2 C leftover cooked chicken or turkey, chopped
2 pkg. (1 LB/12 oz.) broccoli flowerets, cooked & drained
1 C cheddar cheese, shredded
1 can (10.75 oz.) condensed cream of mushroom soup
1 can (13.5 oz.) evaporated milk
Black pepper to taste
1 can (13.5 oz.) French fried onions
Preheat oven to 350-degrees F. Place leftover cooked chicken or turkey in a 9x13" baking dish. Top with broccoli; cover with shredded cheddar cheese. In a bowl, mix together condensed cream of mushroom soup and milk; season with black pepper to taste. Pour over casserole. Bake uncovered for about twenty-five minutes. Sprinkle French fried onions on top; bake an additional five minutes. Serve. Variation: Leftover cooked beef or pork can also be used in place of chicken or turkey.
