Jewish parve confection (neither dairy nor meat)

Line a loaf pan (8x4 or 9x5) with plastic wrap; coat with nonstick cooking spray. In a saucepan, combine sugar, honey and water; cook over medium-high heat until sugar dissolves. Bring mixture to a boil; insert a candy thermometer. Continue to cook until mixture reaches 250 degrees on thermometer; remove from heat. In a bowl, whisk Tahini paste until smooth. Stir in cinnamon, cloves and vanilla. Add pistachios; mix well. Place mixture into prepared loaf pan; smooth the top. Cover tightly with plastic wrap. Refrigerate for at least twenty-four hours before cutting into squares and serving.

 

Note: Halvah contains no dairy products. It can be eaten with meals containing meat, which is in accordance with Jewish dietary laws (kashrut).
