1 C frozen vegetable mixture (broccoli, carrots & cauliflower)
2 C water
1 can (14.5 oz.) Swanson beef broth
1 can (14.5 oz.) diced tomatoes in juice
3/4 C uncooked Halloween pasta shapes (Black Cat or Chidester Farms brands)
1 pkg. (16 oz.) frozen cooked beef meatballs
Combine frozen vegetables, water, beef broth, diced tomatoes with juice and pasta in large cooking pot; bring to a boil. Reduce heat and simmer for about eight minutes or until pasta is just tender. Microwave meatballs according to package directions; adds to soup mixture. Simmer for about three minutes or until meatballs are heated through. Recipe makes enough for about four servings.
Note: Black Cat pasta (cats & paws) can be purchased online through The Pasta Shoppe, while the Chidester Farms brand can be bought online from Wal-Mart.
