Green Bean Soup
1 medium onion, finely chopped
1 pat of butter or margarine
4 potatoes, unpeeled & cubed
4 C fresh green beans
1/4 C flour (add more if necessary to thicken soup)
4 C stewed tomatoes
1 pinch fresh basil
1 tsp. garlic, crushed
1/2 C soy sauce
Salt & pepper to taste
In a small frying pan, brown onion in butter or margarine. In a large cooking pot, combine onion with cubed potatoes and green beans. Sprinkle with flour and then add water. Stir. Add tomatoes, spices and soy sauce. Simmer soup for two to four hours, stirring frequently. Serve hot.
