Egyptian baked cheese balls
1 C firm feta cheese, crumbled (sub with Egyptian gebna or labna cheese)
1 TBS flour
1 egg
Salt & black pepper to taste
Olive oil
Lemon wedges (for serving; optional)
Pita bread cut into triangles (for serving; optional)
Preheat oven to 400-degrees F. In a bowl, mix together cheese, flour, egg, salt and black pepper. Using hands, roll dough into 1-inch balls. If the mixture appears sticky, add a little more flour. If the mixture appears dry, add a bit of lemon juice, vinegar or water. Add two to three tablespoons of olive oil onto a cookie sheet to grease; spread evenly. Arrange balls on cookie sheet; roll around to coat thoroughly with olive oil. Bake for about five minutes. Wearing an oven mitt, shake cookie sheet to turn and to prevent cheese balls from sticking. Bake for another five minutes, or until balls are golden brown. Remove with a spatula and drain on paper towels.
Suggestions: Serve warm cheese balls with lemon wedges and triangles of pita bread.
