3 TBS olive oil
1 tsp. minced garlic
1/4 onion, sliced
4 white button mushrooms, sliced
Salt & black pepper to taste
1 tsp. prepared basil pesto
1 C cooked spaghetti pasta (leftover or fresh)
In a large skillet, cook sliced onions and minced garlic in olive oil until the onions turn translucent. Add salt and black pepper to taste. Stir in sliced mushrooms. When the mushrooms begin to brown, stir in the cooked pasta and basil pesto. Cook until the pasta turns crispy to preference, stirring occasionally, for about five to ten minutes. Serve.
