Colonial American

Rinse the mushrooms under cold water; dab with paper towels to dry. In a small bowl, beat one egg. In another bowl, mash the crackers into crumbs. Dip mushrooms in the beaten egg, and then into the cracker crumbs. In an electric skillet, preheat 1 cup of shortening (Crisco) until it reaches 375-degrees F. Fry mushrooms until brown on all sides; drain on paper towels and serve.
