Colonial American
2 C cooked meat (leftover beef, chicken or pork)
2 TBS butter
2 C potatoes, peeled & diced
3/4 C turnips, peeled & diced
3/4 C carrots, diced
1 C sliced beets (use canned if desired)
1/2 C onions, chopped
Salt & black pepper to taste
Water
2 tsp. vinegar
Chop meat into bite-sized pieces. Heat butter in a large cooking pot; add vegetables and meat. Season with salt and black pepper to taste. Add enough water to barely cover ingredients; stir. Bring to a boil, stirring occasionally. Reduce heat; add vinegar and simmer for one hour to ninety minutes, or until vegetables are tender. Serve hot.
