Grilled Meat Tacos
2 green bell peppers, de-seeded & sliced
1 red bell pepper, de-seeded & sliced
1 onion, thinly sliced
Vegetable oil
1 C fresh mushrooms, sliced
2 C cooked beef or chicken meat, diced
2 TBS Fajita Seasoning
10 flour tortillas (12")
De-seed and rinse bell peppers. Cut bell peppers and onion into thin slices similar to strips. In a skillet, sauté bell pepper strips and sliced onion in a small amount of vegetable oil until tender. Add mushrooms and cooked beef or chicken. Simmer mixture until heated through. Stir in Fajita Seasoning. Warm the tortillas slightly in oven or microwave; fill and roll with meat mixture. Serve.
Suggestion: Top Fajitas with shredded cheddar cheese, diced tomatoes and lettuce.
