Eritrean Fiery Potato Stew
2 TBS olive oil
1 medium onion, chopped
4 tsp. Berbere spice
6 medium potatoes, cubed
1 small can tomato paste
1 TBS salt
4 C chicken stock
Heat olive oil in a skillet. Add onions and cook for about five minutes. Add Berbere spice and potatoes; cook for an additional five minutes. Pour in chicken stock and stir. Simmer for about ten minutes. Add tomato paste and salt; cook an additional ten minutes. Serve.
