Food Fare: Polish RecipesDill Soup

Zupa Koperkowa

Heat a small amount of vegetable oil in a cooking pot. Add chopped dill and sauté for a few minutes, stirring gently. Turn dill onto a plate. Add more vegetable oil to cooking pot; sauté grated carrot and finely chopped onion together for about four minutes, or until soft. Add stock to the cooking pot; stir in dill. Bring mixture to a simmer. Add orzo pasta and cook for about twelve minutes, or until pasta is done. In a large bowl, combine one cup of hot stock with processed Gouda cheese or sour cream. Return mixture to cooking pot and stir to mix with other ingredients. When ready to serve, ladle soup into bowls and garnish with fresh dill.
