Deep-Fried Bananas
1 C plus 4 oz. rice flour
Pinch of salt
4 oz. fresh coconut, grated
2 oz. sugar
1 TBS sesame seeds
1/2 C water
5 small bananas, peeled
4 C safflower oil (for frying)
In a bowl, sift the flour with the salt; stir in the coconut, sugar and sesame seeds and whisk in the water. Allow to stand for five minutes (the batter should coat the bananas easily). If the batter is too thick, add another two tablespoons of water. Fill a wok half-way with oil and heat over medium temperature. Slice bananas lengthwise; dip into the batter and deep-fry a few slices at a time. Remove; drain on paper towels. Repeat with remaining bananas. Serve at once.
