12 fresh Medjool dates*
1/2 C ground almonds
2 TBS pistachio nuts, finely chopped
2 TBS sugar
Orange flower water**
24 walnut halves
Powdered sugar (for garnish)
Cut a slit down the length of each date with a knife; remove the seeds. In a bowl, mix together ground almonds, chopped pistachio nuts and sugar. Add enough orange flower water to make a smooth paste. Shape half the paste into twelve nuggets the size of date seeds; stuff the dates. Use remaining paste to sandwich walnut halves together in pairs. Sprinkle powdered sugar over stuffed dates and walnuts. Serve.
*About Medjool dates: Although native to the Middle East and North Africa, Medjool dates can also be cultivated in other desert climates, including various arid regions in Australia and California. Medjool dates are known for their large size, richly sweet taste and juicy flesh. They are available online at Medjool Dates (California).
**Note: Orange flower water can be purchased at gourmet specialty shops. For a substitute, use two drops of orange oil or two teaspoons of orange-flavored liqueur (such as Triple Sec, which is not in accordance with Islamic Dietary Laws regarding alcohol).
